This is one of our family’s weekly menu items! It seriously never gets old.
2 Chicken Breasts, cut into bite sized pieces
2 Cloves Garlic, crushed
1 TBSP EVOO
Himalayan salt, garlic powder, pepper (to taste)
1/2 Cup Pesto
1/2 Cup Coconut Cream (I refrigerate cans of coconut milk, and scrape the cream off the top)
1/4 Cup Parmesan Cheese, grated or shredded
Gluten Free or Whole Wheat Pasta (optional)
2 Cups Steamed Broccoli
Heat a large pan on medium heat. Add EVOO, Chicken, garlic and seasonings. Cook evenly, until no longer pink.
Add coconut cream, pesto, and parmesan cheese. Reduce heat to medium-low
Steam Broccoli and add to pan until cooked to desired tenderness
Serve over top of GF or Whole Grain Pasta
