Ya’ll, these things are THE BEES KNEES. I’m over here wondering how I made it all the way through 80 Day Obsession listening to everyone rave about these, and never actually made them until now when I’m doing LIIFT4—I swear I’m such a slacker!
But these are now 100% on our weekly meal plan lineup. They are fast, easy, have a nice kick of flavor (I added a few extra spices!), and they’re super filling so it’s a win-win.
And because I despise blogs where I have to scroll through 50 feet of stories before I can find a recipe–I shall make you wait no longer!
EGG ROLL IN A BOWL
(makes 4 servings)
1 lb lean ground turkey
1 14-16 oz bag of cole slaw mix
4 tsp Sesame Seed Oil
3 Cloves garlic (or more if you’re like me and always double the amount haha)
1/2 tsp Ginger (ground or fresh–whatever you’ve got)
1/4 cup organic beef broth (or chicken, or veggie)
3 TBSP coconut aminos (or low sodium soy sauce)
1/2 tsp hot sauce (more to taste)
1 tsp vinegar (white or apple cider)
Himalayan Salt, Pepper, Chili Powder, and red pepper flakes (optional, to taste)
Brown ground turkey in a skillet on medium heat with salt, pepper, chili power, and red pepper flakes
Combine soy sauce (aminos), hot sauce, vinegar, and ginger in a small bowl and set aside
Once cooked through, drain meat and set aside
Add Sesame Oil to your pan with cole slaw mix and sauté lightly
Add garlic and broth to the pan
Cook until cole slaw mixture is tender
Add meat and soy sauce mixture back to pan and stir together
Let simmer until flavors combine to your taste
Serve as is, or over brown rice.
Container Count: 1 red, 1 green, 1 yellow (if you use the rice), 1 tsp
I simply divided the pan into quarters once it was done cooking and separated the portions into 4 meal containers for the rest of the week. You can weight using a scale if you’d prefer it to be more accurate.
