There I was, it was DAY ONE of my 100 Day commitment, and I was already ready to cave….
Just kidding. You know I hate long drawn out stories about where my recipes came from, but this one really does hit the spot in a pinch, and helps you stay on track with your goals!
1 tsp baking powder
1 Scoop Shakeology (or protein powder of choice)
1 tsp sweetener (optional: liquid stevia works great!)
dash of salt
2-3 TBSP water
Optional: Mix in or topping items: peanut butter, unsweetened cocoa powder, fruit, etc)
In a coffee mug, mix baking powder, shakeology, sweetener, and salt
Add in 1 egg, and 2-3 TBSP water
Mix well, until all dry ingredients are wet
Microwave 60-90 seconds
Tip: If you add peanut butter, push it down into the center of the batter before microwaving, and it will resemble a PB lava cake. Also– it’s super easy to check whether the cake is done by seeing if the edges of the cake are pulling away from the sides of the mug. If they’re still stuck or seem wet, give it a few more seconds!
