A couple of weeks ago, a friend gave me a link to try a freebie for HelloFresh. We’ve tried a few of the meals that fit into my Gluten Free lifestyle, and this one was by far one of our favorites, PLUS it’s super easy to re-create. It’s 100% being added to our family rotation!
2 Cloves Garlic
1 small piece Ginger
1/2 Cup- Jasmine Rice
2- 12oz Chicken Breast
1 1/2 tsp White Wine Vinegar
1 TBSP Soy Sauce, GF Soy Sauce, or Coconut Aminos
1 TBSP Chicken Stock Concentrate
1 oz Honey
2 Cups Green Beans
Step 1: Bring 1 cup of water and a pinch of salt to a boil in a small pot. Wash all produce. Mince garlic, peel and mince ginger (1 TBSP), and cut lime into quarters.
Step 2: When water is boiling, add rice to the pot. Cover, and let simmer for approx 15 mins. Meanwhile, wash, dry and season chicken breast with salt and pepper. Head 2 TBSP olive oil in a large pan over medium/high heat. Cook chicken until browned and cooked through (5 mins each side). Remove from pan, and set aside.
Step 3: Add another 2 TBSP olive oil to the same pan over medium/low heat. Add garlic and ginger. Cook while stirring until fragrant (about 1 minute). Add 1 1/2 TBSP of vinegar and let reduce until evaporated.
Step 4: Add 1 TBSP soy sauce, 2 TBSP water, chicken stock concentrate and honey to same pan. Allow to simmer until thick (2-3 mins). Return chicken to the pan and toss to coat. Remove chicken from pan and set aside.

Step 5: Steam green beans for approximately 3-4 minutes in the microwave.
Step 6: Divide rice between plates. Top with chicken and green beans. Squeeze lime over top of all, and enjoy!
